A lot of my Blog Posts will talk about food and some of those will also mention a few recipes that I will add to this page as I go. If you are looking for a particular recipe or a way to tweak your favourite recipe to be a little more calorie friendly, let me know and I will see what I can do!

Banana (or Pumpkin) Oat Drop Cookies

About the Recipe

Want a quick snack that loaded with sweetness and fibre, satisfying and healthy...I need to freeze or hide these because if the plate is left out I will eat them all...

Ingredients

  • 3 very ripe bananas (or 1 cups mashed pumpkin, you can used canned)

  • 2 1/2 cups old fashioned oats (not quick or instant)

  • 3 tbsp sugar free maple syrup (like Steeve's)

  • 1/3 cup mini chocolate chips

  • pinch of salt

Preparation

  1. Preheat your oven to 350 degrees

  2. Mix it all ingredients together in a large bowl, allow to rest 10 minutes.

  3. Spoon out 1 heaping tablespoon of the mixture using 1 tablespoon measuring spoon and place it onto a baking sheet lined with parchment paper. Use the back of a spoon to flatten the dough out just a bit. Continue until you have made 12-16 cookies or all of the cookie dough is gone.

  4. Place into the oven and bake for 12-15 minutes. The cookies should be slightly golden.

  5. Remove, cool and enjoy.....I really love the pumpkin ones which can be made with leftover mashed sweet potato or butternut squash or other orange winter squash.
