About the Recipe
Wonderful low fat, waist friendly version of a pound cake. Great served with your preferred mug of tea and favourite book.

Ingredients
1 large egg
1/2 cup fat free milk
1/2 cup plain fat free yogurt
3 tbsp vegetable oil
2 cups all purpose flour
1/2 cup coconut sugar
4 tsp baking powder
1/2 tsp table salt
1 1/2 cups frozen blueberries
1 tbsp all purpose flour
2 tbsp brown sugar
2 tbsp sliced almonds or oats
1/4 tsp ground cinnamon
Preparation
Step 1
Preheat oven to 400 degrees. Grease a 9" spring form pan.
Step 2
Make the streusel topping by stirring together brown sugar, sliced almonds, and cinnamon. Whisk together the first 4 ingredients into a large bowl.
Step 3
Sift together the 2 cups flour and next 3 ingredients in another bowl. Stir flour mixture into the egg mixture just until moistened, do not over mix.
Step 4
Toss the blueberries or other frozen berries of choice into 1 tbsp of the extra flour; fold into the batter. Pour the batter into spring-form pan. Sprinkle with remaining 1/4 cup of blueberries and then the streusel.
Step 5
Bake at 400 degrees for 25 to 30 minutes or until the toothpick inserted comes out clean. Cool in pan on a wire rack 15 minutes and then enjoy...after removing the pan first ..ha ha!
