About the Recipe
Super simple, low in fat and WW points for flavour punch. Not a lot of protein in this one so it's going to be filling but it won't stay with you for a long time. If this soup needs to keep you going through a long day or gap between meals I would suggest **adding in a can of rinsed white cannellini or Romano beans in Step 2.

Ingredients
1 package of fresh chopped onions/peppers/celery ( or 1/4 cup of each )
1 tbsp EVOO
1 tsp italian seasoning spice dried
1 - 14 oz can of diced tomatoes (with garlic & onions)
5 cups fat free chicken broth
1/2 tsp ground black pepper
1 package (8 oz) refrigerated cheese tortellini
2 cups fresh baby spinach
spicy calabrian hot sauce (like Bomba)
Preparation
Step 1
Warm olive oil in a large soup pot and add the onions, peppers and celery, saute on medium/high for a few minutes.
Step 2
Add the Italian seasoning and stir in the tin of tomatoes, chicken broth and black pepper. Increase the heat to high and bring to a boil.**
Step 3
Stir in the tortellini and return to a boil, now reduce the heat to low and simmer gently for 6-8 minutes depending on the pasta package instructions. Remove from heat and stir in the baby spinach. ENJOY! (with a sprinkle of parmesan cheese)
Step 4
Note: I love spicy everything so I would probably add a few dashes of Bomba Calabrian hot sauce to this...you do you!!!
