About the Recipe
Applesauce emulsifies the other ingredients creating a nice thick vinaigrette that coats a salad perfectly. The tang brings out the flavours of your favourite ingredients, get creative, get colourful and because it's fat-free and low cal you can add a little extra which just makes my day. If you need to get in some healthy oils into your regime you can always add 1 tsp of EVOO after you have finished dressing your salad so you are controlling your oil consumption.

Ingredients
1/4 cup unsweetened applesauce
1/2 tsp soy sauce OR 1 tsp miso paste
1/4 tsp ground cumin
2 tbsp apple cider vinegar or white balsamic
1 tsp Dijon mustard or your favourite designer mustard
1 tbsp maple syrup
1/4 tsp garlic powder
fresh black pepper ground, to taste
Preparation
Place all ingredients in to a deep cup and use an immersion blender and blend everything until smooth, if you don't have an immersion blender its no problem, just double or triple the ingredients and process in a regular blender or food processor.
Extra maple syrup will make this sweeter if that is your preference, a bit of water will make it thinner (again, your taste)
Note: I like to add a little garlic powder because fresh garlic can leave me with bad breath for days but it's up to you, you can also go with other fresh herbs like some thyme or a basil - just remember to start with a few pieces at a time. Also if you like a punch and Dijon is not your bag, you can also try a 1/4 tsp of horseradish.
