About the Recipe
I never ate this soup while I lived in Italy, in fact I think I only ever had baked lasagna with beef once in 12 years but every region is different and that is why Italy oozes recipes left, right and centre. However this recipe has a warm feeling about it and it's not difficult to throw together. The ingredients are usually on hand and relatively inexpensive, and it's waistline friendly. Try not to buddy it up with garlic bread though..stick with a nice salad or some grilled vegetables instead if you still feel hungry.

Ingredients
1 lb extra lean turkey/chicken breast ground
non stick cooking spray
1 large sweet pepper, diced
1 medium onion, diced
2 garlic cloves, diced
2 cans diced tomates (no sugar), with juice
1 litre beef broth (fat free)
1/4 cup tomato paste
1 cup Marinara sauce (like Classico)
2 tsp italian seasoning
1/4 tsp black pepper
4 lengths of lasagna noodles broken (small pieces)
1/4 cup grated parmesan cheese
Preparation
Step 1
Saute up the ground meat with a spritz of non stick spray or drizzle of olive oil until just cooked.
Step 2
Add the sweet pepper, onion and garlic and soften them up. Then add the cans of tomatoes, beef broth, tomato paste, marinara sauce, italian seasoning and black pepper - stir and bring everything to a simmer. Cover for 20 minutes on low, stirring occasionally. **. If you have any parmesan cheese rind chunks, throw a piece in now for flavour while it simmers.
Step 3
Add in the broken lasagna noodles. Â Cook until al dente, serve with a sprinkle of parmesan cheese.
Step 4
You can adjust salt and pepper as you like and even add in some hot sauce too.  If you don’t have parm, just use a sprinkle of mozza or provolone 🙂
