About the Recipe
Authentic Paprikas is irresistibly delicious. Browned chicken, creamy sauce, buttered dumplings...the epitome of comfort food. This recipe is a revamp to save on time and calories but still hones in on the richness of the Hungarian flavours. You can serve it with a side salad or braised/grilled vegetables.

Ingredients
cooking spray
1 onion, minced
1 green pepper, cliced
1 red pepper, sliced
2 tbsp sweet smoked paprika
400 gram tin chopped tomates (or stewed and crush them with your hands)
1/2 litre chicken stock (low fat)
200 grams or 1/2 box of whole wheat macaroni
400 grams or 1 lb cooked skinless turkey or chicken breast, shredded
100 grams or 1/4 cup fat free plain greek style yogurt**
Preparation
Spray a deep frying pan with the cooking spray and saute up the onions and peppers 6-8 minutes, then add the paprika and stir and cook for 1 minute.
Stir in the tomatoes and chicken stock, simmer for 15 minutes, uncovered.
While the sauce is cooking, cook the whole wheat macaroni according the directions (minus 1-2 minus), then drain. When the sauce has thickened, stir in the turkey (or chicken) and yogurt, warm it all through thoroughly for about 3-4 minutes but don't boil it. Season to taste with some salt if needed.
Serve with the noodles.
** I like to add extra yogurt because I like it a bit creamier and this only adds extra protein to the dish. If you like your food a little spicy as I do, then add some hot hungarian paprika to this dish (be careful though...a little goes a long way)
